  • 1 pound pasta of choice
  • 3 cups shredded cheese (i use vegan cheddar)
  • 1 cup fresh tomatoes (diced or halved)
  • 1 cup chopped sundried tomatoes (drain oil)
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 4 cups milk – dairy or oat is best
  • 2 tablespoons minced garlic
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper
  • 1 teaspoon each dried oregano & dried basil
  • 1 teaspoon red pepper flakes
  • 2 tablespoons parmesan cheese (optional)
instructions
  • preheat broiler to 500°F.
  • cook pasta, drain, & stir in cheese, tomatoes, & sundried tomatoes. set aside in casserole dish.
  • make sauce: stir together the butter and flour in saucepan on medium heat. immediately after combined, whisk in milk & garlic. continually whisk or stir. add spices.
  • after 10 minutes dip a clean spoon into sauce; if spoon is well coated, the sauce is done. if not, turn up heat to high and keep whisking until thickened.
  • pour the finished sauce over the pasta mixture in the casserole dish.
  • broil for 5 minutes or until slightly browned. top with parmesan and let cool 5 minutes before serving.

tiramisu's (better) sibling. no baking and simple to put together, just give yourself enough time to let it chill in the fridge!

ingredients
  • 14 oz cream cheese
  • 14 oz dulce de leche
  • coffee and/or milk
  • 750 g chocolinas or other chocolate cookies
  • 150 g heavy cream
  • 300 g chocolate, chopped
instructions
  • mix cream cheese and dulce de leche until smooth.
  • in a cake pan/casserole dish, make a layer of chocolate cookies dipped in coffee or milk.
  • alternate layers of cookies and the cream cheese/dulce de leche mix.
  • on the stove, warm heavy cream and whisk in chocolate. pour on top of last layer of cookies/dulce de leche.
  • cover & refrigerate for 6+ hours.
